our first post

Thank you for visiting us. This is our first post, we should describe who we are and what we do. I have been into cooking since my childhood in late 70s. My mom worked as an engineer and i use to go to my aunt Melek's house to do homework where i used to sit and help her in the kitchen. I observed her and learned from her, attention to detail, respect for the ingredient, following over 50 steps in a recipe where most recipe books would only document 5 at most.


I am a scientist at heart but with a highly creative mind. Cooking is a unique activity that combines chemistry, biology, physics, mechanics, thermodynamics with basic aspects of life, food, fire, conversation and laughter. It nourishes the body and the soul.


In this blog, i will share recipes, thoughts and history of what i know as Turkish cuisine, but in reality the cuisine of the region including the Balkans, Greek, Anatolia and the levant.


I have the privilege of coming from a family from Aegean coast and Hatay-Antakya, both of which are well-known for their cuisine.
